With this project, it is planned to determine the best alternatives to improve the quality of the pork meat and its derivatives, through various aspects that significantly affect the various points on the value chain of the meat industry.
The main objectives of the project are to improve the knowledge about the defects in the quality of pork meat at different stages of the value chain (from arrival in slaughterhouses to the preparation of cooked and cured products), as well as to develop and validate innovative technologies for the classification of pig carcasses, pieces of fresh meat and processed products that allow a rapid transmission to differentiated markets.
